We have tried lots of versions of homemade mac n’ cheese in our household only to have my children’s noses bent out of shape because they don’t like it. You know how it goes. You take all the time to make what you think is going to be a great mac n’ cheese, but the kids just don’t like it. Some versions of mac n’ cheese are just too strong in flavor or not the right consistency of cheesiness, etc. Here is the a recipe for mac n’ cheese that your kids will love without a doubt, mine do.
8 Tbs. Butter
8 Tbs. Flour
1 tsp. Salt
1/4 tsp. White Pepper
4 Cups Milk
15 Oz. Shredded Sharp Cheddar
16 Oz. Uncooked Macaroni (1 Box of Macaroni)
For the cheese, I use a combination of the Trader Joe’s Cheddar Gruyere and Melange. About 8 oz block of this. Then I pair it with a Sharp Cheddar and use about 7 oz. Don’t worry. It won’t end up being too strong. In fact, it’s just the opposite.
To save time, I also cube the cheese. This way you don’t have to do all of the grating with the cheese grater. Cut the cubes of cheese about 3/4″ to 1″. Add a couple of cubes at a time. The other tip is to constantly stir the mixture while adding your cheese. This will ensure that the mixture does not stick to the bottom.
Melt the butter over low heat, add flour, salt and pepper. Once mixed, add milk. Cook until thickened, stir it occasionally so the bottom doesn’t scorch. Lower the heat, add cheese and stir until melted. Combine with cooked noodles & transfer to a greased 9×13 pan. Cover with breadcrumbs and bake @ 350 for 35-40 minutes.
This will make a lot of mac n’ cheese. We had enough to have dinner the next night and the kids even had some for the lunch with their sandwiches the following day. This would make a great dish to take to a party or special occasion.
