The Perfect Oatmeal Raisin Cookies

Here’s a family recipe that has been around as long as I can remember.  This is a cookie I grew up on.  Every since I was little, I can remember the heavenly sent of these cookies coming from the oven.  Isn’t crazy how smell can trigger those childhood memories like that? Anyhow, we have nick named these oatmeal raisin cookies, muffins because they come out so fluffy and large every time.

  • 1 1/4 Cup Sifted Flour
  • 1 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1 Tsp. Salt
  • 3/4 Cup Butter
  • 1/2 Cup Sugar
  • 1 1/2 Cup Brown Sugar
  • 2 Eggs
  • 1 Tsp. Vanilla
  • 2 1/2 Cup Oats
  • 1 Cup Coconut
  • 1 Cup Chopped Nuts (Optional)

Take your two eggs and slightly beat them.  Soak your raisins in your eggs until needed.  Add your dry mixture together (Sifted Flour, Baking Powder, Baking Soda, and Salt.)  Cream your butter, sugar, and brown sugar together.  Add the vanilla into the mixture of butter and sugar.  Add the dry mixture in with the butter, sugar, and vanilla.  Add the raisins and egg mixture.  Last, stir in the oats, coconut, and chopped nuts.  Bake at 375 degrees for 12-15 minutes.
