The Best Blueberry Muffins

Here’s a recipe for blueberry muffins that my sister and I grew up with.  I remember waking up on those special mornings when my Mom woke up early and made muffins for everyone.  It was a such a treat.  Now, the tradition continues and Lily is asking when I’m going to make blueberry muffins.  I’m sure you’re also asking yourself are they really the BEST? Yes, they really are.  You have to try them for yourself because they are that good.

Blueberry Muffin Recipe

  • 1/2 c. butter
  • 2 c flour
  • 1 c sugar
  • 2 eggs room temp
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 2 1/2 c blueberries
  • 2 tsp. sugar

Rinse the blueberries really well and let them sit.

Cream butter and sugar until fluffy. Add eggs one at a time.  Add vanilla.  Stir in dry ingredients alternately with milk.  Stir berries in by hand.  Spoon into cupcake tins.  I use the silicone muffin cups.  Fill the cups about 2/3rds full.  This will make about 11/12.  Sprinkle the tops of the muffins with the 2 tsp. sugar.

Bake at 375 degrees for 25 to 30 mins.

 So easy, and just a few ingredients, no preservatives or additives!

    I just made these this morning and they are fabulous! Easy to make and tasty to eat 🙂 I used frozen blueberries that I had picked this summer and they turned out just fine.

    i want to add lemon, should i use zest or juice and how much?
    also has anyone ever substituted the milk for mayo? (in other recipes it had added incredible moisture/flavor)
