I love, love, love summer. My family loves all of the fresh fruit that is available during the summer months. I came up with this recipe for a tropical summer salsa a while back because we eat a lot of fish tacos and I wanted a lighter version of salsa to compliment the fish. This is also great to eat by itself with chips. My daughters love the chips and salsa. They actually prefer this over the fish tacos. Who could blame them! 🙂 Bye the way, this is also a great way for Mom to sneak in some veggies with the fruit.
Tropical Summer Salsa Recipe:
- 1 Pineapple
- 2 Red Mangoes
- 1/2 of a Cucumber
- 1/2 of a Red Pepper
- 1/2 Orange Pepper
- 1/4 Cup of Red Onion
Optional 1 to 1-1/2 Jalapenos depending if you want some spice added to the recipe. I opt out of any spice because of my kiddos, but they are a really nice addition to the salsa.
You can also halve this recipe becuase it makes a lot of salsa. Use a very large bowl. Also, if you prefer not to wait for the fresh pineapple to ripen you could always use a can of pineapple slices.
